What do I serve with Mousse de Canard au FOIE GRAS?
I got a box with Mousse de Canard au Foie gras as a gift, Id like to use it but I dont know how to serve it. Could you give me some ideas?
Answer: Good quality bread and crackers, some chopped hard boiled eggs, little cornichon pickles or other pickled veggies. Foie gras is really rich so these offer a nice contrast. I would like onions or scallions with it but that is just me.

How do I open a FOIE GRAS jar?
A friend of mine got me a jar of Foie gras. Its a glass jar with a iron wire brace on top, the inner lid is surround with a ring of orange colored rubber.
Once I release the wire brace, I cant get the top off, I tried push, pull, twist, but the darn thing just wont open. Is there a trick Im missing?
Answer: When you release the wire brace you need to push the tab all the way down and against the jar. Then you can open it. It is vacuum sealed so that is why the rubber ring. You may need to pry up the inner lid to release the vacuum.

Answer: Foie gras-STUFFED DATES
Servings: Makes 4 servings.
You can use bloc de Foie gras (imported from France in tins) or a slice of fresh Foie gras pâté or mousse, sold at many specialty foods shops and cheese shops.
Ingredients
6 large Medjool dates, halved lengthwise, pitted
2 ounces (about) Foie gras (goose or duck liver)
Fleur de sel*
Chopped fresh parsley
Preparation
Fill each date half with heaping 1/2 teaspoon Foie gras. Arrange filled dates on platter. (Can be prepared 3 hours ahead. Cover and chill.) Sprinkle each date with salt and parsley.
ROASTED LOIN OF VEAL WITH Foie gras AND CHERRY-RED GRAPE SAUCE
Servings: Makes 8 servings.
Order the roast a week ahead from your butcher. It needs to marinate overnight, so be sure to begin one day ahead.
Ingredients
Sauce
2 cups low-salt chicken broth
1 cup beef broth
2 cups dry red wine
1 1/2 cups small seedless red grapes
1/4 cup (packed) golden brown sugar
1 teaspoon Worcestershire sauce
1/2 cup drained wild cherries in syrup (such as amarena)*
Veal
1 3 1/2-pound trimmed boneless veal strip loin
2 tablespoons olive oil plus more for brushing
1 tablespoon chopped fresh rosemary plus whole sprigs for garnish
1 tablespoon chopped fresh thyme plus whole sprigs for garnish
1 6- to 8-ounce block cooked duck Foie gras, cut lengthwise into 1/4-inch-thick slices (optional)
*Available at specialty foods stores and online from buonitalia.com.
Preparation
For sauce:
Boil both broths until reduced to scant 1 cup. Set aside.
Bring wine and next 3 ingredients to boil in another saucepan, stirring until sugar dissolves. Reduce heat to medium-low and simmer until reduced to 11/2 cups, about 30 minutes. Using slotted spoon, transfer grapes to small bowl; add cherries to grapes. Add reduced broth to grape syrup. Boil until reduced to 3/4 cup, about 10 minutes. Do ahead Can be made 2 days ahead. Cover fruits and sauce base separately and refrigerate.
For veal:
Brush veal with olive oil. Sprinkle chopped herbs all over. Wrap veal in plastic; chill overnight.
Position rack just below center of oven; preheat to 425°F. Sprinkle veal with salt and pepper; let stand at room temperature 30 minutes. Heat 2 tablespoons oil in 14-inch ovenproof skillet over medium-high heat. Add veal, fat side down. Sear until brown, about 4 minutes. Turn over; sear until brown, about 4 minutes. Place skillet in oven. Roast veal until thermometer inserted into center registers 135°F to 140°F, about 25 minutes. Transfer to platter. Tent with foil; let stand 10 minutes. Reserve skillet.
Meanwhile, separate Foie gras slices on plate to bring to room temperature.
Tilt reserved skillet; spoon off fat from juices. Add juices to sauce base. Simmer until thick enough to coat spoon, about 3 minutes. Add grapes and cherries; heat 1 minute.
Cut veal into 1-inch-thick slices; arrange on plates. Top with Foie gras, if using, and sauce. Garnish plates with rosemary and thyme sprigs. Serve, passing remaining sauce separately.

What is a delicious yet simple to prepare entree to serve after Foie gras? What should I do with the FOIE GRAS butter a friend made for me?
A friend gave me a jar of some Foie gras butter and suggested I eat it on toast, which was good, but I could only eat so much of it that way and I still have about a half a pound or so left. Any suggestions on what to do with it? Maybe something with filets of beef? Also, does anyone know how long this will keep in my fridge?
Answer: Wow, that would be delicious on top of a perfectly cooked filet. I think I would be tempted to try with lobster too (even scallops). I believe kept stored properly in the refrigerator, it would keep up to six weeks.

Am planning a (belated) Valentines dinner and was debating between serving chateaubriand with bernaise or a cut of meat with pan seared Foie gras.
Does anyone have a recommendation for best partnering of meat type (pls suggest cut) with sauce for the Foie gras? Im thinking serving it with a small mound of flavoured mash (maybe truffle?) and a jus reduction would probably be the best bet but I would like to hear your ideas too.

Answer: hello there, serving the chateaubriand with the Foie gras is not a bad idea, secondo me only the flavorus will clase , you can try the sirlion or as we say in italian the sottofiletto,
or try pairing with the fillet mignon 90 gms each serve three a portion, ask ur macchelaio to trim and clean bene,
seal in very hot skillet and cook in oven 4-5 minute for evn cooking , marinate with shallots , bay leaves , fresh black pepper and sea salt, 3 minutes maximum.

What is the difference between the taste of cooked FOIE GRAS and the taste of an ordinary cooked chicken liver?

Answer: If you are trying to replicate the flavor of Foie gras with vegetarian components, you will not succeed. Foie gras is the fattened liver of a duck or goose. It really tastes nothing like chicken liver, and is much lighter and creamier. My husband hates liver (chicken, calf, pork, etc.) but loves Foie gras. I would compare it to a meaty butter. It is very high in fat, very rich.
If you are a vegetarian, it's going to be hard to describe the flavor to you because I truly can't think of any vegetable that it tastes like. Perhaps there's an obscure wild mushroom that carries some of the meaty flavors, but really -- it's sort of like asking, "What sort of meat could I use to replicate the flavor of carrots?"

Does FOIE GRAS go bad if it isnt refrigerated? Does it expire even with refrigeration?
My sister who lives in Paris brought me back a jar of Foie gras...it wasnt refrigerated for the entire 13+ hour flight. I immediately put it into the fridge, but its been in there for months now and I havent touched it. Now I wonder if its still good.
So would either of those situations make the Foie gras go bad?
Answer: NO it's fine...most Foie gras pate is sold on store shelves without any refridgeration. Plus, since the fat content in it is so high it resists spoilage even more.

Whats the best place in Portland to buy FOIE GRAS on food stamps?
My roommates and I have very little income. We are going to prepare Beef Wellington and obviously dont intend to use a mushroom pâté (were not vegans after all). An area butcher accepts EBT and sells excellent tenderloin roasts and vintage charcuterie, so that much is taken care of, but we have yet to encounter a decent Foie gras that is eligible for food stamps.
Answer: Let's get this right. You're first sentence is that you and your roommates have very little income. Then you have the audacity to say that you are making Beef Wellington on Food Stamps! And your complaint is not finding decent Foie gras? Get off your @sses and get a job! Go to Grocery Outlet like the rest of us schlumps and make your undeserved handout last a few days. Jack@ss!!!
