Answer: Recipe: Galette des rois
(Serves 8)
Ingredients:
1 1/4 lb frozen puff pastry
2 eggs
7 oz almond paste
Preparation:
Leave the puff pastry at room temperature for about 2 hours until defrosted but still cold.
Preheat the oven to 400°F.
Line a baking sheet or pizza pan with baking parchment or grease the pan and lightly sift flour on it. Shake off any excess flour. Roll each sheet of pastry into a circle about 12 inches across.
Place one circle on the prepared pan.
Mix the egg with the almond paste until smooth and spread the mixture evenly on the prepared circle of pastry, leaving a border 1 1/2 inches wide all around. If you have a small china, insert it into the almond mixture (you may also use a bean as the fève. The person who gets the fève is the King or Queen.
Place the second circle of pastry on top and press it down tightly around the rim.
Beat lightly the remaining egg and brush it on the top of the cake. With a long-bladed knife, press lightly but firmly through the egg glaze marking a crisscross pattern.
Bake for 20–25 minutes until golden and puffed. Do not check for doneness for at least 15 minutes, as the pastry may collapse. Serve slightly warm or cold.
Traditionally the galette is topped with a cardboard crown, which is given to the person who gets the fève.

If you don't want to use an almond filling, try apples. That's what they do in bakeries in France.

Do any bakeries in Toronto make GALETTE DES ROIS?
What bakeries in Toronto make Galette des rois? Approximately how much does it cost? Alternatively, does anyone know of an easy recipe for it?
Answer: It is a pretty special pastry/gateaux, it is not a common item in many bakery's there are recipes on-line and not hard to make it just involves alot of butter.
Also it hasa frangipane filling, made with butter, almond paste, icing sugar and flour, and you put a dried bean in it, and the one who finds it is King or Queen for the day, I would make one, and puff pastry is available at all grocerys stores, roll it out make 2 rounds, add the filling, egg the rim, put the top layer of pastry on, then poke a few whole in and bake it at 375 d F for 25-30 minutes, use the egg to glaze it before baking too.

Im baking a GALETTE DES ROIS but i used almond butter instead of paste...how bad is this mistake?
i couldnt find almond paste anywhere so i just used almond butter assuming it wouldnt make too much of a difference because i thought they were both spreadable almond flour with sugar. apparently theres a huge difference and i have to bring this cake to class tomorrow so im really worried about how embarassing this mistake is gonna be in terms of taste and such for my cake..
apparently almond paste is like marzipan...so its a lot drier sweeter thicker and lighter in taste.
Answer: So how did it go? I don't know almond butter but it's probably very different from "frangipane" (what you put in a Galette des rois). Frangipane doesn't really taste like much until it's cooked. However I'm sure your cake was still good and if your classmates have never tried a real Galette des rois they probably couldn't tell the difference ;)
Almond paste ("pâte d'amande") is the same thing as marzipan but it's not what you put in a Galette des rois either! The special Galette des rois filling is called "frangipane". Next time try making some yourself, it's not very hard! The only thing you need to find is almond powder.
Here's a recipe:
- 125g (about 10 tbsp) sugar
- 125g (about 4.5 oz, dunno how many cups) almond powder
- 125g (about 4.5 oz) butter
- 2 eggs
- 1 tbsp rum (optional)
Just mix the softened butter, sugar and almond powder, then add the eggs one by one and the rum.
The above recipe will do perfectly, but if you really want to go all-out, you should know that it's actually a recipe for "almond cream" ("crème d'amande") and that traditional frangipane is two-thirds almond cream plus one third "pastry cream" ("crème pâtissière"). Pastry cream is slightly trickier to make, but here's a recipe:
Pastry cream
- 1/4 liter (about 1 cup) milk
- 30g (about 2 tbsp) sugar
- 20g (about 2 tbsp) flour
- 2 egg yolks
- half a vanilla bean
Mix the egg yolks and the sugar until nearly white, then add the flour.
Put the milk in a saucepan with the vanilla bean split lengthwise and put on medium heat. When the milk starts boiling, pour it on the mixture and stir lightly with a whisk. Remove the vanilla bean then put the mixture back in the saucepan on medium heat for about a minute while stirring constantly so that it doesn't stick to the pan. It's ready when it becomes thick and hard to stir. Then remove it from the heat and let it cool but cover the surface with plastic wrap or a crust will form.

Would the pastry be ruined if I use aluminum foil rather than wax paper?
Im baking a Galette des rois for my French class and I have all of my materials except wax paper. I dont have time to go out and buy some. Is aluminum foil a possible substitute?
Ive baked cookies on aluminum foil many times and they turned out fine. All I need to do is to use the butter spray so the cookies wont stick.
Also, I dont think that using a paper bag will be safe because the temperature Im baking at is close to the ignition source of paper.

Answer: If you have a good recipe it's good. But that's rare to find. Its not how Americans typically think of cake so it gets changed and then is no longer good. It's more of a cross between a pie and a cake.
